This week's menu revolves around a non-working oven! :) If it can't go in the crockpot, the stovetop or in the microwave, we won't be making it this week.

Tuesday: Red Beans and Rice in the crockpot
Wednesday: Awana night so quick stuff - mac & cheese, chicken nuggets, etc.
Thursday: Mexicali Chicken Burritos from Busy People's Low Fat Cookbook
Friday: Vegetable Soup OR pizza if oven is fixed or DH brings it home!
Saturday: Southwestern Chicken in the crockpot from Fix it and Forget it Lightly
Sunday: Family lunch

List ten of life's simple pleasures.

  • A full, uninterrupted night of sleep.
  • Rereading an old favorite.
  • Diet Coke so cold that it has little ice crystals in it.
  • Afghans to curl up under.
  • Baby nuzzles from the littlest.

    Scrapbook Challenge for this Week...

This week's challenge is to create a layout titled This Month. Use what you and your family did last month as the content. For each person in your family (or just for yourself) make a list of all the things that were happening.

    Just because...

My Dad, the photographer, took this a few weeks ago and it's so cool, I just had to share. He sent it to Noelle, but she doesn't know who Santa is so it was a little anticlimactic. I'm assuming I have a little older reader-ship so enjoy! (This is a friend of our family who plays Santa at one of the malls every year. The beard is real!)

    Menu Plan Monday

This week's menu is nothing fancy. :) We're having N1's and my nephew's combined birthday lunch here on Sunday and so this week is all about power-cleaning the house and getting it ready for a family invasion. It has also needed cleaning for several weeks and I am in the mood for some serious fall cleaning and decorating. :)

    Monday: fajitas (chicken)
Tuesday: Christmas Morning French Toast (new recipe, this sounds yummy!), bacon and pears
Wednesday: chicken nuggets and french fries, boca burgers for adults
Thursday: BBQ pork chops which I have been trying to make for several weeks now!
    Friday: Soup of some kind
Saturday: Little Ceasars pizza! (I love to make our pizza myself, but this Saturday is our church's fall festival and I am not going to feel like cooking once we get home. Travis is working the festival so I'll have girl duty the whole time. By the time I get them home, bathed and bedded, and he rolls home, he will starving and I'll be exhausted. This works out for both of us!)

    miniBOOK

This week was the first issue of Ali Edwards' ezine and she threw out a challenge for a miniBOOK. Coincidentally, it just so happens that I've been wanting to put one together of a few favorites. Here are a few of my pages that I've made ... she limited her to five, but I think I'm going to keep adding to mine. :) The album which isn't shown is one that I found in Target's fabulous $1 section. I want to go back and embellish the cover, but that's not going to happen this week.

    Slow Cooker Thursday

I love collecting recipes and especially crockpot ones. As this pregnancy progress through the winter seasons, I envision using my crockpot quite a bit the next several months so that I'm not on my feet late in the day trying to whip supper together. That said, I will eager looking through this week's offerings!

Mine this week is one that I made weekly our first year of marriage ... I always had the ingredients and it is EASY!

    Cheesy Crockpot Chicken

6 chicken breast halves, throw them in the crockpot frozen rock solid
    garlic powder, to taste
2 cans cream of chicken soup
    1 can cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in a crockpot. Cook on LOW all day.

Serve over rice or noodles or baked potatoes.

This is wonderful ... it's great for kids because of the cheesy sauce. They love it! My personal favorite is serving it over baked potatoes or rice as opposed to the noodles, but it's all good. You could even add a handful or two or frozen mixed veggies the last hour or so. Enjoy! :)

One of my goals this year has been to diversify my reading. As I've spent the last 17 years homeschooling anywhere from 1-4 kids, I woul...
